🥣 Vegan Pea Soup (Simple, Hearty & Comforting)

Serves: 4 | Time: ~35 minutes

🌱 Ingredients

  • 2 cups green peas (fresh or frozen)

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 medium potato, diced (for creaminess)

  • 1 tbsp olive oil

  • 4 cups vegetable stock or water

  • ½ tsp cumin powder

  • ½ tsp black pepper

  • Salt to taste

  • 1 tbsp lemon juice (optional)

👩‍🍳 Method

  1. Sauté onion in olive oil until soft. Add garlic and cook 30 seconds.

  2. Add peas & potato, pour in stock. Bring to a boil.

  3. Simmer on low heat for 20–25 minutes until everything is tender.

  4. Blend until smooth (or partially blend for texture).

  5. Season with salt, pepper, cumin & lemon juice.
