🥣 Vegan Pea Soup (Simple, Hearty & Comforting)
Serves: 4 | Time: ~35 minutes
🌱 Ingredients

2 cups green peas (fresh or frozen)

1 medium onion, chopped

2 cloves garlic, minced

1 medium potato, diced (for creaminess)

1 tbsp olive oil
-
4 cups vegetable stock or water

½ tsp cumin powder

½ tsp black pepper
-
Salt to taste

1 tbsp lemon juice (optional)
👩🍳 Method

Sauté onion in olive oil until soft. Add garlic and cook 30 seconds.

Add peas & potato, pour in stock. Bring to a boil.

Simmer on low heat for 20–25 minutes until everything is tender.

Blend until smooth (or partially blend for texture).

Season with salt, pepper, cumin & lemon juice.
