🌱 Vegan Tiramisu Recipe

🧾 Ingredients

Cream layer

  • 1½ cups raw cashews (soaked 4–6 hrs, then drained)

  • 1 cup thick coconut cream (chilled)

  • ½ cup maple syrup or powdered sugar

  • 2 tbsp lemon juice

  • 1 tsp vanilla extract

  • 2 tbsp coconut oil (melted, optional but helps set)

  • ½–1 tsp instant coffee powder (optional, for flavor)

Coffee dip

  • 1½ cups strong brewed coffee or espresso (cooled)

  • 1–2 tbsp sugar or maple syrup (optional)

Layers

  • Vegan ladyfingers
    or plain vegan biscuits / sponge cake slices

Topping

  • Unsweetened cocoa powder

  • Dark chocolate shavings (optional)


👩‍🍳 Instructions

  1. Make the cream:
    Blend soaked cashews, coconut cream, sweetener, lemon juice, vanilla, coconut oil, and coffee powder until ultra smooth.

  2. Prepare coffee dip:
    Mix cooled coffee with sweetener.

  3. Assemble:

    • Quickly dip biscuits into coffee (don’t soak too long).

    • Layer biscuits in a dish.

    • Spread a thick layer of vegan cream.

    • Repeat layers, finishing with cream on top.

  4. Chill:
    Refrigerate at least 4–6 hours (overnight = best).

  5. Serve:
    Dust generously with cocoa powder and add chocolate shavings.
