🌱 Vegan Tofu Skewers Recipe

🧾 Ingredients

  • 400 g firm or extra-firm tofu (pressed, cubed)

  • 1 bell pepper (chunks)

  • 1 onion (chunks)

  • 1 zucchini or mushrooms (optional)

Marinade

  • 3 tbsp soy sauce (or tamari)

  • 2 tbsp olive oil

  • 2 tbsp lemon juice or vinegar

  • 1 tbsp maple syrup or sugar

  • 1 tsp smoked paprika

  • 1 tsp garlic powder (or fresh garlic)

  • ½ tsp black pepper

  • ½ tsp chili powder (optional)

  • 1 tsp cornflour (helps crisp!)


👩‍🍳 Instructions

  1. Press tofu for 15–20 minutes to remove excess water.

  2. Mix marinade in a bowl.

  3. Marinate tofu for at least 30 minutes (1–2 hours = best).

  4. Assemble skewers:
    Alternate tofu, peppers, onion, and veggies.

  5. Cook (choose one):

🔥 Oven:

  • Bake at 200°C (400°F) for 25–30 min, turning once.

🔥 Grill / BBQ:

  • Grill 10–12 min, rotating, until charred.

🔥 Pan:

  • Cook on medium heat, turning sides until golden.


✨ Serve With

  • Vegan mint chutney 🌿

  • Garlic vegan yogurt sauce

  • Flatbread / naan

  • Fresh salad or rice
