🌱 Vegan Tofu Skewers Recipe
🧾 Ingredients

400 g firm or extra-firm tofu (pressed, cubed)

1 bell pepper (chunks)

1 onion (chunks)

1 zucchini or mushrooms (optional)
Marinade

3 tbsp soy sauce (or tamari)

2 tbsp olive oil
-
2 tbsp lemon juice or vinegar
-
1 tbsp maple syrup or sugar
-
1 tsp smoked paprika
-
1 tsp garlic powder (or fresh garlic)

½ tsp black pepper
-
½ tsp chili powder (optional)

1 tsp cornflour (helps crisp!)
👩🍳 Instructions

Press tofu for 15–20 minutes to remove excess water.

Mix marinade in a bowl.

Marinate tofu for at least 30 minutes (1–2 hours = best).

Assemble skewers:
Alternate tofu, peppers, onion, and veggies. -
Cook (choose one):
🔥 Oven:

Bake at 200°C (400°F) for 25–30 min, turning once.
🔥 Grill / BBQ:

Grill 10–12 min, rotating, until charred.
🔥 Pan:

Cook on medium heat, turning sides until golden.
