Keto Crepes (Soft & Flexible)

Ingredients (6–8 crepes)

  • 4 large eggs

  • ½ cup unsweetened almond milk

  • 2 tbsp melted butter (or coconut oil)

  • 2 tbsp cream cheese, softened

  • 1 tsp vanilla extract

  • 1 tbsp powdered erythritol or monk fruit

  • Pinch of salt

  • Optional: ¼ tsp xanthan gum (extra flexibility)

Instructions

  1. Blend everything
    Add all ingredients to a blender. Blend 30–45 seconds until completely smooth.
    Rest batter 5 minutes (important for texture).

  2. Heat pan
    Use a non-stick pan on medium-low heat. Lightly grease.

  3. Cook crepes

    • Pour ~¼ cup batter into pan

    • Swirl quickly to thin it out

    • Cook 45–60 sec until edges lift

    • Flip and cook another 15–20 sec

  4. Stack crepes with parchment between them.


 Keto “Snickers” Caramel Layer

Ingredients

  • ¼ cup butter

  • ⅓ cup heavy cream

  • ¼ cup powdered monk fruit sweetener

  • 1 tbsp allulose (optional but recommended for real caramel texture)

  • ½ tsp vanilla extract

  • Pinch of salt

Instructions

  1. Melt butter in saucepan over medium heat

  2. Add cream + sweetener → whisk constantly

  3. Simmer 6–8 minutes until thick and glossy

  4. Remove from heat, stir in vanilla + salt

  5. Cool slightly (thickens as it cools)

 Tip: Don’t rush this—low and slow = no grainy caramel.


 Peanut Layer

Ingredients

  • ½ cup unsweetened natural peanut butter

  • ¼ cup chopped roasted peanuts

  • 1–2 tbsp powdered sweetener (to taste)

  • Pinch of salt

Instructions

  1. Warm peanut butter slightly so it spreads easily

  2. Mix in sweetener + salt

  3. Fold in chopped peanuts


 Keto Chocolate Sauce

Ingredients

  • ¼ cup sugar-free dark chocolate chips

  • 1 tbsp coconut oil or butter

  • 1 tbsp heavy cream

Instructions

  1. Melt everything together over low heat

  2. Stir until smooth and glossy


 Assembly (The Fun Part)

For each crepe:

  1. Spread peanut layer

  2. Drizzle caramel sauce

  3. Fold or roll crepe

  4. Drizzle chocolate sauce on top

  5. Optional garnish:

    • Crushed peanuts

    • Sea salt flakes

    • Extra chocolate drizzle (because obviously)


 Optional: Snickers Dessert Style

  • Stack crepes like a cake with layers inside

  • Chill 30 minutes

  • Slice like a crepe cake = chef’s kiss
