Keto Crepes (Soft & Flexible)
Ingredients (6–8 crepes)

4 large eggs

½ cup unsweetened almond milk

2 tbsp melted butter (or coconut oil)

2 tbsp cream cheese, softened

1 tsp vanilla extract

1 tbsp powdered erythritol or monk fruit

Pinch of salt

Instructions

Blend everything
Add all ingredients to a blender. Blend 30–45 seconds until completely smooth.
Rest batter 5 minutes (important for texture). -
Heat pan
Use a non-stick pan on medium-low heat. Lightly grease. -
Cook crepes

Pour ~¼ cup batter into pan

Swirl quickly to thin it out

Cook 45–60 sec until edges lift

Flip and cook another 15–20 sec

Stack crepes with parchment between them.

¼ cup powdered monk fruit sweetener

Instructions

Melt butter in saucepan over medium heat

Add cream + sweetener → whisk constantly

Simmer 6–8 minutes until thick and glossy

Remove from heat, stir in vanilla + salt

Cool slightly (thickens as it cools)
