Vegan Tiramisu

Servings: 6–8

Prep Time: 20 minutes

Chill Time: 4–6 hours (or overnight)


Ingredients

For the Coffee Soak:

  • 1 cup strong brewed coffee or espresso, cooled

  • 2 tbsp maple syrup or sugar

  • 1 tsp vanilla extract

  • 2–3 tbsp coffee liqueur or rum (optional, for traditional flavor)

For the Vegan Cream Layer:

  • 1 ½ cups raw cashews (soaked in water 4 hours or boiled 15 minutes) or use silken tofu

  • ½ cup coconut cream (thick part from canned coconut milk)

  • ½ cup powdered sugar or maple syrup

  • 2 tsp vanilla extract

  • Optional: 1 tbsp lemon juice (for slight tang)

For the Base:

  • 16–20 vegan ladyfingers or vegan sponge biscuits

  • Cocoa powder, for dusting


Instructions

1. Prepare the Coffee Soak

  1. Brew strong coffee and let it cool.

  2. Stir in maple syrup (or sugar), vanilla extract, and optional liqueur. Set aside.


2. Make the Cream

If using cashews:

  1. Drain soaked cashews and place in a high-speed blender.

  2. Add coconut cream, powdered sugar, vanilla extract, and lemon juice.

  3. Blend until smooth and creamy (2–4 minutes).

If using silken tofu:

  1. Blend tofu with coconut cream, powdered sugar, vanilla, and lemon juice until smooth.

Taste and adjust sweetness.


3. Assemble the Tiramisu

  1. Dip each vegan ladyfinger or biscuit briefly into the coffee soak — do not oversoak.

  2. Line the bottom of a serving dish (8×8 inch works well) with a layer of soaked biscuits.

  3. Spread half of the vegan cream evenly over the biscuits.

  4. Repeat with another layer of soaked biscuits and the remaining cream.

  5. Smooth the top with a spatula.


4. Chill

  • Cover with plastic wrap and refrigerate for 4–6 hours (or overnight).

  • Chilling allows flavors to meld and the cream to set.


5. Serve

  • Dust generously with cocoa powder just before serving.

  • Optional: add vegan chocolate shavings for extra elegance.


Tips for Perfect Vegan Tiramisu

  1. Cashews must be well-soaked for a smooth, creamy texture.

  2. Don’t oversoak biscuits — a quick dip is enough; otherwise, they become mushy.

  3. Chill long enough — at least 4 hours to let the dessert set properly.

  4. Optional flavor twist: add a tsp of instant coffee to the cream for extra coffee depth.


Fun Variations:

  • Chocolate Tiramisu: Stir 2–3 tbsp cocoa powder into the cream.

  • Mocha Tiramisu: Add a tsp espresso powder to the cream for stronger coffee flavor.

  • Fruit Tiramisu: Layer with sliced strawberries or raspberries for a fruity twist.
