🌱🍰 Vegan Cinnamon Roll Cake

All the flavors of cinnamon rolls—no rolling, super easy!

Pan: 9×9 inch | Time: ~45–50 minutes


Cake Batter

Ingredients

  • 1½ cups all-purpose flour

  • ¾ cup sugar

  • 2 tsp baking powder

  • ¼ tsp salt

  • 1 cup plant milk (soy/almond)

  • ¼ cup oil

  • 1 tbsp apple cider vinegar

  • 1 tsp vanilla extract


Cinnamon Swirl

Ingredients

  • ½ cup brown sugar

  • 1½ tbsp cinnamon

  • 2 tbsp melted vegan butter (or oil)


Glaze (Optional but Recommended)

Ingredients

  • ¾ cup powdered sugar

  • 1–2 tbsp plant milk

  • ½ tsp vanilla


Instructions

  1. Preheat oven to 175°C / 350°F. Grease pan.

  2. Mix batter: Whisk flour, sugar, baking powder, and salt. Add plant milk, oil, vinegar, and vanilla. Pour into pan.

  3. Swirl: Mix swirl ingredients. Drop spoonfuls over batter and swirl with a knife.

  4. Bake: 30–35 minutes, until a toothpick comes out mostly clean.

  5. Glaze: Mix glaze ingredients and drizzle over warm cake.
