🍫🌱 Vegan German Chocolate Loaf Cake

Moist chocolate loaf topped with classic coconut–pecan frosting.

Makes: 1 loaf (9×5 in) | Time: ~1 hour


Chocolate Loaf Cake

Ingredients

  • 1½ cups all-purpose flour

  • ¾ cup sugar

  • ¼ cup cocoa powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 cup plant milk (soy/almond)

  • ¼ cup oil

  • 1 tbsp apple cider vinegar

  • 1 tsp vanilla extract

Instructions

  1. Heat oven to 175°C / 350°F. Line a loaf pan.

  2. Whisk flour, sugar, cocoa, baking soda, and salt.

  3. Add plant milk, oil, vinegar, and vanilla. Mix just until smooth.

  4. Pour into pan and bake 40–45 min (toothpick mostly clean).

  5. Cool completely before frosting.


Coconut–Pecan Frosting

Ingredients

  • ½ cup canned coconut milk (full-fat)

  • ½ cup brown sugar

  • 1 tbsp cornstarch

  • 1 cup shredded coconut

  • ½ cup chopped pecans

  • ½ tsp vanilla
