Vegan Eggplant Patties
Crispy on the outside, soft and flavorful inside—these eggplant patties are perfect as a snack, burger filling, or side dish.
📝 Ingredients

1 large eggplant

1 small onion, finely chopped

2–3 cloves garlic, minced

½ cup breadcrumbs (or oat flour for gluten-free)

2 tbsp chickpea flour (or all-purpose flour)

2 tbsp chopped fresh parsley or cilantro

½ tsp cumin powder
-
½ tsp paprika

Salt & black pepper, to taste

1–2 tbsp olive oil (for cooking)

Prepare eggplant: Peel if desired, cut into cubes, and steam or boil until very soft (about 8–10 minutes). Drain well and mash.

Mix: In a bowl, combine mashed eggplant with onion, garlic, herbs, spices, breadcrumbs, and chickpea flour. Mix until a thick mixture forms.

Shape: Form into small patties.

Cook: Heat olive oil in a pan over medium heat. Pan-fry patties 3–4 minutes per side until golden and crisp.

Serve: Enjoy hot with vegan yogurt sauce, tahini, or ketchup
