Vegan Eggplant Patties

Crispy on the outside, soft and flavorful inside—these eggplant patties are perfect as a snack, burger filling, or side dish.

📝 Ingredients

  • 1 large eggplant

  • 1 small onion, finely chopped

  • 2–3 cloves garlic, minced

  • ½ cup breadcrumbs (or oat flour for gluten-free)

  • 2 tbsp chickpea flour (or all-purpose flour)

  • 2 tbsp chopped fresh parsley or cilantro

  • ½ tsp cumin powder

  • ½ tsp paprika

  • Salt & black pepper, to taste

  • 1–2 tbsp olive oil (for cooking)

👩‍🍳 Instructions

  1. Prepare eggplant: Peel if desired, cut into cubes, and steam or boil until very soft (about 8–10 minutes). Drain well and mash.

  2. Mix: In a bowl, combine mashed eggplant with onion, garlic, herbs, spices, breadcrumbs, and chickpea flour. Mix until a thick mixture forms.

  3. Shape: Form into small patties.

  4. Cook: Heat olive oil in a pan over medium heat. Pan-fry patties 3–4 minutes per side until golden and crisp.

  5. Serve: Enjoy hot with vegan yogurt sauce, tahini, or ketchup
