Ingredients:
1 pre-made graham cracker crust,
2 boxes (3.4 oz each) sugar-free coconut or vanilla instant pudding
2 cups cold unsweetened almond milk or skim milk
1 cup fat-free whipped topping (Cool Whip)
1/2 cup toasted sweetened coconut
1 tsp coconut extract.
Instructions:
Mix pudding and milk until thick.
Fold in half the Cool Whip and all the coconut extract.
Spread into crust.
Top with remaining Cool Whip and toasted coconut.
Chill for at least 1 hour.
