WW Spicy Lemon Chicken Kabobs

Ingredients
For the Chicken

500 g boneless skinless chicken breast, cut into 1-inch cubes

1 tbsp olive oil

2 tbsp fresh lemon juice

1 tsp lemon zest

3 garlic cloves, minced

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

1 tsp chili powder

1 tsp ground cumin
-
1/2 tsp black pepper
-
1/2 tsp salt
-
1 tsp dried oregano
Vegetables (optional but recommended)

1 red bell pepper, cut into chunks

1 green bell pepper, cut into chunks

1 small red onion, cut into chunks

1 zucchini, sliced thick
Lemon Yogurt Sauce (optional WW-friendly sauce)

1/2 cup nonfat Greek yogurt
-
1 tbsp lemon juice
-
1 small garlic clove, minced
-
1 tbsp chopped fresh parsley
-
pinch salt and pepper
Step 1: Make the Marinade
In a large bowl combine:

olive oil

lemon juice
-
lemon zest
-
garlic
-
paprika
-
cayenne pepper
-
chili powder
-
cumin
-
oregano
-
salt
-
black pepper
Mix well until fully combined.
Step 2: Marinate the Chicken

Add chicken cubes to the marinade.

Toss until all pieces are coated.

Cover and refrigerate at least 30 minutes.
For best flavor marinate 2–4 hours.
Step 3: Prepare the Skewers

If using wooden skewers, soak them in water 20–30 minutes to prevent burning.

Thread chicken pieces onto skewers.

Alternate with vegetables for color and flavor.
Example pattern:
Chicken → Pepper → Onion → Chicken → Zucchini.
Step 4: Cook the Kabobs
Grill Method (Best Flavor)

Preheat grill to medium-high heat (200–220°C / 400–425°F).

Lightly oil grill grates.

Place kabobs on the grill.

Cook 10–12 minutes, turning every few minutes.

Chicken should reach internal temperature 74°C / 165°F.
Oven Method

Preheat oven to 220°C / 425°F.

Place skewers on a baking tray lined with foil.

Bake 18–20 minutes, turning halfway.

Broil for 2–3 minutes at the end for light char.
Air Fryer Method

Preheat air fryer to 200°C / 400°F.

Place skewers in basket (do not overcrowd).

Cook 10–12 minutes, turning once.
Step 5: Make the Lemon Yogurt Sauce
In a bowl combine:
