WW Spicy Lemon Chicken Kabobs

Servings

4 servings (about 2 kabobs per serving)


Ingredients

For the Chicken

  • 500 g boneless skinless chicken breast, cut into 1-inch cubes

  • 1 tbsp olive oil

  • 2 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • 3 garlic cloves, minced

  • 1 tsp paprika

  • 1/2 tsp cayenne pepper (adjust to taste)

  • 1 tsp chili powder

  • 1 tsp ground cumin

  • 1/2 tsp black pepper

  • 1/2 tsp salt

  • 1 tsp dried oregano


Vegetables (optional but recommended)

  • 1 red bell pepper, cut into chunks

  • 1 green bell pepper, cut into chunks

  • 1 small red onion, cut into chunks

  • 1 zucchini, sliced thick


Lemon Yogurt Sauce (optional WW-friendly sauce)

  • 1/2 cup nonfat Greek yogurt

  • 1 tbsp lemon juice

  • 1 small garlic clove, minced

  • 1 tbsp chopped fresh parsley

  • pinch salt and pepper


Step 1: Make the Marinade

In a large bowl combine:

  • olive oil

  • lemon juice

  • lemon zest

  • garlic

  • paprika

  • cayenne pepper

  • chili powder

  • cumin

  • oregano

  • salt

  • black pepper

Mix well until fully combined.


Step 2: Marinate the Chicken

  1. Add chicken cubes to the marinade.

  2. Toss until all pieces are coated.

  3. Cover and refrigerate at least 30 minutes.
    For best flavor marinate 2–4 hours.


Step 3: Prepare the Skewers

  1. If using wooden skewers, soak them in water 20–30 minutes to prevent burning.

  2. Thread chicken pieces onto skewers.

  3. Alternate with vegetables for color and flavor.

Example pattern:
Chicken → Pepper → Onion → Chicken → Zucchini.


Step 4: Cook the Kabobs

Grill Method (Best Flavor)

  1. Preheat grill to medium-high heat (200–220°C / 400–425°F).

  2. Lightly oil grill grates.

  3. Place kabobs on the grill.

  4. Cook 10–12 minutes, turning every few minutes.

  5. Chicken should reach internal temperature 74°C / 165°F.


Oven Method

  1. Preheat oven to 220°C / 425°F.

  2. Place skewers on a baking tray lined with foil.

  3. Bake 18–20 minutes, turning halfway.

  4. Broil for 2–3 minutes at the end for light char.


Air Fryer Method

  1. Preheat air fryer to 200°C / 400°F.

  2. Place skewers in basket (do not overcrowd).

  3. Cook 10–12 minutes, turning once.


Step 5: Make the Lemon Yogurt Sauce

In a bowl combine:

  • Greek yogurt

  • lemon juice

  • garlic

  • parsley

  • salt and pepper

Mix well and refrigerate until serving.


Step 6: Serve

Serve kabobs with:

  • lemon yogurt sauce

  • chopped parsley

  • extra lemon wedges
