Weight Watchers Baked Spinach Mushroom Quesadillas

Ingredients

For the Filling

  • 2 cups fresh spinach, chopped

  • 1 1/2 cups mushrooms, finely sliced

  • 1/2 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tsp olive oil (or cooking spray)

  • 1/2 tsp cumin

  • 1/2 tsp chili powder

  • 1/4 tsp black pepper

  • 1/4 tsp salt

For the Quesadillas

  • 4 whole wheat tortillas (8-inch)

  • 1/2 cup reduced-fat shredded mozzarella or Mexican blend cheese

  • cooking spray

Optional Toppings

  • salsa

  • plain nonfat Greek yogurt (as a sour cream substitute)

  • sliced avocado

  • chopped cilantro


Step 1: Prepare the Vegetables

  1. Heat a large skillet over medium heat.

  2. Add olive oil or cooking spray.

  3. Add chopped onion and cook for 2–3 minutes until soft.

  4. Add garlic and cook 30 seconds until fragrant.


Step 2: Cook the Mushrooms

  1. Add sliced mushrooms to the pan.

  2. Cook for 5–6 minutes until mushrooms release their moisture and start browning.

  3. Stir occasionally so they cook evenly.


Step 3: Add Spinach and Seasoning

  1. Add chopped spinach to the pan.

  2. Stir until spinach wilts (about 1–2 minutes).

  3. Add:

    • cumin

    • chili powder

    • salt

    • black pepper

  4. Mix well and cook 1 more minute.

Remove mixture from heat and let cool slightly.


Step 4: Assemble the Quesadillas

  1. Preheat oven to 200°C (400°F).

  2. Line a baking sheet with parchment paper or lightly coat with cooking spray.

  3. Lay tortillas flat on the baking sheet.

  4. Spread the spinach mushroom mixture evenly over half of each tortilla.

  5. Sprinkle cheese evenly on top of the vegetables.

  6. Fold the tortilla over to create a half-moon shape.


Step 5: Bake the Quesadillas

  1. Lightly spray the tops with cooking spray for crispiness.

  2. Bake for 10 minutes.

  3. Flip carefully and bake 5–7 more minutes until golden and crispy.


Step 6: Serve

  1. Remove from oven and let rest 2 minutes.

  2. Slice each quesadilla into wedges.

  3. Serve with:

    • salsa

    • Greek yogurt

    • fresh cilantro

    • avocado slices
