Keto Crispy Cabbage Fritters

Ingredients

Main

  • 3 cups finely shredded green cabbage
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Binding mixture

  • 2 large eggs
  • ½ cup almond flour
  • ¼ cup grated hard cheese (cheddar or parmesan; optional but recommended for flavor and crispness)
  • 2 tbsp psyllium husk powder or 1 tbsp coconut flour (helps firm texture)

Seasoning

  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp dried herbs (dill, parsley, or oregano)

For frying

  • 3–4 tbsp oil (olive oil, avocado oil, or butter)

Instructions

1. Prepare the cabbage

  1. Finely shred the cabbage.
  2. Sprinkle with a little salt and let sit for 10 minutes.
  3. Squeeze out excess moisture using a clean cloth or your hands.
    • This step is essential for crisp fritters.

2. Mix the batter

  1. In a large bowl, combine cabbage, onion, and garlic.
  2. Add eggs and mix well.
  3. Stir in almond flour, cheese (if using), and psyllium husk (or coconut flour).
  4. Add all seasonings.
  5. Mix until a thick batter forms that holds together when pressed.
    • If too wet, add a bit more almond flour.

3. Shape the fritters

  • Form small patties (about 2–3 tablespoons each), flatten slightly for even cooking.

4. Fry

  1. Heat oil in a pan over medium heat.
  2. Place fritters in the pan without overcrowding.
  3. Cook 3–5 minutes per side until deep golden brown and crispy.
  4. Transfer to a paper towel-lined plate.

5. Serve

  • Serve warm for best texture.

Serving suggestions

  • Pair with sour cream or a garlic yogurt dip (use full-fat, low-carb options)
  • Add a side salad or avocado slices

Tips for best results

  • Removing moisture from cabbage is the key to crispiness
  • Flatten fritters thinly for a better crust
  • Do not flip too early—let a crust form first
  • Cook in batches to avoid steaming

Variations

  • Add shredded zucchini (squeezed dry) for a mixed vegetable version
  • Spice it up with chili flakes or green chilies
  • Add cooked bacon bits for extra richness

Approximate keto profile (per fritter)

  • Low net carbs (depends on onion and cabbage amounts)
  • Moderate protein
  • High healthy fats
