Mongolian Ground Beef Noodles

Ingredients

Main

  • 8 oz noodles (lo mein, spaghetti, or ramen)
  • 1 lb ground beef
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 3 green onions, sliced

Sauce

  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 1/2 cup beef broth (or water)
  • 1 tbsp hoisin sauce (optional)
  • 1 tsp sesame oil
  • 1 tbsp cornstarch + 2 tbsp water (slurry)

Instructions

  1. Cook noodles
    Boil according to package directions. Drain and set aside.
  2. Brown the beef
    In a large skillet, cook ground beef over medium-high heat until browned. Drain excess grease if needed.
  3. Add aromatics
    Stir in garlic and ginger. Cook for about 1 minute until fragrant.
  4. Make the sauce
    Add soy sauce, brown sugar, broth, and hoisin. Stir and bring to a simmer.
  5. Thicken
    Add cornstarch slurry and stir until the sauce becomes glossy and slightly thick.
  6. Combine
    Toss in cooked noodles and green onions. Mix until everything is well coated.
  7. Finish
    Drizzle sesame oil on top and give it a final toss.

🔥 Optional upgrades

  • Add sliced bell peppers or broccoli for crunch
  • Sprinkle red pepper flakes for heat
  • Top with sesame seeds for that takeout look
