Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk (room temp)
  • 2 eggs
  • 1/4 cup melted butter (plus more for cooking)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Mix dry ingredients
    In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Mix wet ingredients
    In another bowl, whisk buttermilk, eggs, melted butter, and vanilla.
  3. Combine gently
    Pour wet into dry and stir just until combined.
    Lumps are good—overmixing = tough pancakes.
  4. Rest the batter (key step)
    Let it sit for 5–10 minutes so the batter hydrates and gets extra fluffy.
  5. Cook
    Heat a skillet or griddle over medium heat and lightly butter it.
    Pour about 1/4 cup batter per pancake.
  6. Flip
    When bubbles form and edges look set (about 2–3 minutes), flip and cook another 1–2 minutes.
  7. Serve hot
    Stack them up and top with butter and syrup.

  • Use real buttermilk for that tang and rise
  • Cook on medium—not too hot—so they cook through without burning
  • Keep finished pancakes warm in a low oven (200°F / 95°C)
