Garlic Butter Sirloin Steak Cubes

Ingredients

  • 1–1.5 lb sirloin steak, cut into 1-inch cubes
  • Salt & black pepper (to taste)
  • 1 tbsp olive oil
  • 3 tbsp butter
  • 3–4 cloves garlic, minced
  • 1 tsp fresh thyme or rosemary (optional)
  • 1 tbsp chopped parsley (for garnish)

Instructions

  1. Season the steak
    Pat cubes dry and season generously with salt and pepper.
  2. Heat the pan
    Use a heavy skillet (cast iron is ideal). Heat oil over high heat until very hot.
  3. Sear in batches
    Add steak cubes in a single layer—don’t overcrowd.
    Sear for 1–2 minutes per side until browned. Remove and repeat if needed.
  4. Make garlic butter
    Lower heat to medium. Add butter, garlic, and herbs. Cook for about 30 seconds (don’t burn the garlic).
  5. Toss & finish
    Return steak to the pan and toss in the garlic butter for 1 minute.
  6. Serve immediately
    Sprinkle with parsley and serve hot.

  • Dry meat = better crust
  • Don’t move the cubes too soon—let them sear
  • Medium-rare is ideal (about 130–135°F / 55–57°C inside)
