Banana Bread Cookies

Ingredients

  • 2 ripe bananas (mashed)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/2 cup chocolate chips or chopped walnuts (optional)

Instructions

  1. Prep oven
    Preheat to 350°F (175°C) and line a baking sheet.
  2. Cream wet base
    Mix butter, brown sugar, and granulated sugar until smooth.
    Add mashed bananas, egg, and vanilla.
  3. Add dry ingredients
    Stir in flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Mix just until combined.
  4. Fold in extras
    Add chocolate chips or walnuts if using.
  5. Scoop dough
    Drop spoonfuls onto baking sheet, spacing them apart (they spread slightly).
  6. Bake
    Bake for 10–13 minutes, until edges are set and centers look soft.
  7. Cool
    Let sit 5 minutes on the tray before moving to a rack.

  • Soft like banana bread in the center
  • Lightly crisp edges
  • Chewy if slightly underbaked (best version)

🔥 Tips

  • Use very ripe bananas (brown spots = more flavor)
  • Don’t overmix or cookies get dense
  • Add oats (1/2 cup) for a heartier “breakfast cookie” version
