Air Fryer Fried Okra

Ingredients

  • 12–16 oz fresh okra (cut into 1/2-inch pieces)
  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • 3/4 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional, for color + flavor)
  • 1/4 tsp garlic powder (optional)
  • Cooking spray or 1–2 tbsp oil

Instructions

  1. Prep the okra
    Wash and dry well. Slice into bite-sized rounds.
    (Dry okra = less slime, better crisping.)
  2. Soak
    Toss okra in buttermilk and let sit for 5–10 minutes.
  3. Coat
    In a bowl, mix cornmeal, flour, salt, pepper, and spices.
    Drain okra slightly, then toss in the coating until evenly covered.
  4. Preheat air fryer
    Set to 400°F (200°C) for 3–5 minutes.
  5. Air fry
    Spread okra in a single layer. Lightly spray with oil.
    Cook for 10–12 minutes, shaking halfway through.
  6. Finish crispy
    Cook 1–3 extra minutes if needed for extra crunch.

  • Don’t overcrowd the basket—work in batches if needed
  • A light oil spray helps get that “fried” texture
  • Cornmeal is key for authentic Southern crunch
