0-Point Oatmeal Muffins

Ingredients (base version)

  • 2 cups rolled oats
  • 2 ripe bananas (or 1 cup unsweetened applesauce)
  • 1 cup non-fat Greek yogurt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1–2 tsp zero-calorie sweetener (optional)
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt

Optional add-ins (still light)

  • Blueberries or strawberries
  • Sugar-free chocolate chips
  • Raisins
  • Chopped apples
  • Chia seeds (1–2 tsp)

🥣 Instructions

  1. Preheat oven
    Set to 180°C (350°F). Line a muffin tray or lightly spray it.
  2. Blend oats
    Blend rolled oats in a blender until they become a coarse flour (or leave slightly chunky for texture).
  3. Mix wet ingredients
    In a bowl, mash bananas (or add applesauce). Mix in yogurt, eggs, vanilla, and sweetener.
  4. Combine
    Stir in oat flour, baking powder, cinnamon, and salt until fully mixed.
    Fold in any add-ins.
  5. Bake
    Pour into muffin cups. Bake for 18–22 minutes, or until set and lightly golden.
  6. Cool
    Let cool for 10 minutes before removing—they firm up as they rest.

🧁 Tips for best results

  • Very ripe bananas = naturally sweeter muffins
  • Don’t overbake or they’ll dry out
  • Store in the fridge up to 4–5 days or freeze for longer

🔥 Variations

  • Chocolate version: add 1–2 tbsp cocoa powder
  • Apple cinnamon: add diced apples + extra cinnamon
  • Protein boost: mix in a scoop of protein powder (may slightly change texture)
