Cranberry Orange Scones

Cranberry Orange Scones (WW-Friendly)

Ingredients

  • 1½ cups self-rising flour (or 1½ cups flour + 2 tsp baking powder + pinch salt)
  • ½ cup non-fat Greek yogurt
  • ¼ cup unsweetened applesauce
  • 1 egg
  • 2 tbsp orange juice (fresh if possible)
  • 1 tbsp orange zest
  • ¼ cup dried cranberries (chopped if large)
  • 1–2 tbsp zero-calorie sweetener (optional, to taste)
  • ½ tsp vanilla extract

🍊 Optional glaze (light version)

  • 2 tbsp non-fat Greek yogurt
  • 1 tsp orange juice
  • 1 tsp sweetener

🥣 Instructions

  1. Preheat oven
    Set to 180°C (350°F). Line a baking tray with parchment paper.
  2. Mix wet ingredients
    In a bowl, whisk Greek yogurt, applesauce, egg, orange juice, zest, and vanilla.
  3. Add dry ingredients
    Stir in flour, sweetener, and baking powder (if using all-purpose flour). Mix until a soft dough forms.
  4. Fold in cranberries
    Gently mix them into the dough.
  5. Shape scones
    Form dough into a circle and cut into 6–8 wedges, or shape small drop scones.
  6. Bake
    Bake for 15–18 minutes until lightly golden and set.
  7. Optional glaze
    Mix glaze ingredients and lightly drizzle once scones cool.

  • Don’t overmix the dough—keeps scones tender
