Ingredients

  • 2 large carrots, grated or julienned
  • 1 apple (sweet or tart), thinly sliced or chopped
  • ¼ cup dried cranberries
  • 2 tbsp chopped walnuts or almonds (optional)
  • 1–2 tbsp raisins (optional)
  • 2 cups shredded cabbage or mixed greens (optional for bulk)
  • Fresh parsley, chopped (optional)

🍯 Light Dressing

  • 3 tbsp non-fat Greek yogurt or 2 tbsp light mayo
  • 1 tbsp lemon juice
  • 1 tsp honey (optional)
  • Pinch of salt
  • Black pepper to taste

🥗 Instructions

  1. Prep the produce
    Grate carrots, slice apples, and chop any add-ins.
  2. Mix salad base
    In a large bowl, combine carrots, apples, cranberries, and nuts.
  3. Make dressing
    Stir yogurt (or mayo), lemon juice, honey, salt, and pepper until smooth.
