These are soft, chewy, protein-rich snack bites inspired by monster cookies. They combine oats, peanut butter, honey, chocolate chips, and candy-coated chocolates into an easy no-bake recipe.

Ingredients
Base
- 2 cups old-fashioned rolled oats
- 1 cup natural peanut butter
- 1/3 cup honey or maple syrup
- 1/2 cup ground flaxseed
- 1 tsp vanilla extract
- 1/4 tsp salt
Mix-ins
- 1/3 cup mini chocolate chips
- 1/3 cup mini candy-coated chocolates (like mini M&M-style candies)
- 2 tbsp chia seeds (optional)
- 2 tbsp shredded coconut (optional)
Equipment
- Large mixing bowl
- Measuring cups/spoons
- Silicone spatula or wooden spoon
- Baking tray or plate
- Parchment paper
Instructions
1. Prepare the mixture
In a large bowl, combine:
- peanut butter
- honey
- vanilla extract
- salt
Mix until smooth and creamy.
2. Add dry ingredients
Stir in:
- oats
- flaxseed
- chia seeds (if using)
- coconut (if using)
Mix thoroughly until evenly combined.
3. Add candies and chocolate
Fold in:
- mini chocolate chips
- candy-coated chocolates
Do not overmix or the candies may crack.
4. Chill the dough
Place the bowl in the refrigerator for 15–20 minutes.
This makes rolling easier and helps the bites hold shape.
5. Roll into bites
Scoop about 1 tablespoon of mixture and roll into balls.
Place on a parchment-lined tray.
6. Final chill
Refrigerate for another 10 minutes before serving.
