Air Fryer Bread Pudding (White Bread, Currants)

Ingredients

  • 6–8 slices white bread
  • Butter (enough to spread on both sides of bread + greasing dish)
  • 3 eggs
  • 1 to 1 1/4 cups milk
  • 1/3 to 1/2 cup sugar (adjust to taste)
  • 1/3 cup currants or raisins
  • 1/2 teaspoon vanilla extract (optional but recommended)
  • 1/2 teaspoon cinnamon (optional)

Preparation

1. Prepare the bread

  • Butter both sides of each slice of white bread
  • Cut bread into triangles or cubes (cube shape absorbs custard better)
  • Grease a baking dish that fits your air fryer

2. Assemble the dish

  • Place half the bread in the dish
  • Sprinkle half the currants
  • Add remaining bread on top
  • Add remaining currants

3. Make the custard mixture

  • In a bowl, whisk together:
    • Eggs
    • Milk
    • Sugar
    • Vanilla extract (if using)
    • Cinnamon (if using)
  • Whisk until fully combined and slightly frothy

4. Soak

  • Pour the egg mixture evenly over the bread
  • Press bread down gently so it absorbs liquid
  • Let it rest for 10–15 minutes before cooking (important for texture)

Air Frying Instructions

Preheat

  • Preheat air fryer to 160°C (320°F)

Cooking

  • Place dish in air fryer basket
  • Cook at 160°C for 20–25 minutes

Check doneness

  • Top should be golden brown
  • Center should be set but slightly soft (not runny)
  • If needed, cook an extra 3–5 minutes
