  • 4 medium plums, sliced into wedges
  • 1 tbsp butter, melted
  • 1–2 tbsp keto sweetener (erythritol, monk fruit, or allulose)
  • 1 tsp fresh thyme leaves
  • 1/4 tsp cinnamon (optional)
  • Pinch of salt

Garnish

  • Fresh thyme sprigs
  • Cracked black pepper
  • Chopped walnuts or pecans (optional)

Instructions

1. Preheat oven

Preheat oven to:

  • 375°F (190°C)

2. Prepare the plums

In a bowl, toss plum wedges with:

  • melted butter
  • keto sweetener
  • thyme leaves
  • cinnamon
  • pinch of salt

Mix gently to coat evenly.


3. Roast the plums

Spread plums in a baking dish.

Roast for:

  • 12–15 minutes

They should soften and lightly caramelize while still holding shape.


4. Add the brie

Push the plums slightly to the sides and place the brie wheel in the center.

Drizzle olive oil lightly over the brie.

Optional:

  • score the top rind lightly with a knife for easier melting

Return to oven for:

The brie should feel soft and gooey inside.


5. Finish and garnish

Remove from oven carefully.

  • cracked black pepper
