Ingredients

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder

Stuffing

  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup fresh blackberries, chopped
  • 1 jalapeño, finely diced
  • 2 tbsp chopped green onions
  • 1 tbsp fresh parsley or basil
  • 1/2 tsp salt

Optional Blackberry Glaze

  • 1/4 cup blackberries
  • 1 tbsp water
  • 1 tsp keto sweetener
  • 1 tsp balsamic vinegar

Equipment

  • Sharp knife
  • Mixing bowl
  • Baking dish or oven-safe skillet
  • Toothpicks (optional)

Instructions

Step 1: Preheat Oven

Preheat oven to:

  • 375°F (190°C)

Lightly grease a baking dish.


Step 2: Prepare Chicken

Pat chicken breasts dry.

Using a sharp knife, cut a pocket into the side of each breast without slicing all the way through.

Season both sides with:

  • salt
  • pepper
  • garlic powder
  • smoked paprika
  • onion powder

Step 3: Make the Filling

In a bowl combine:

  • cream cheese
  • mozzarella
  • chopped blackberries
  • jalapeño
  • green onions
  • herbs
  • salt

Mix until evenly combined.


Step 4: Stuff the Chicken

Divide filling evenly among chicken breasts.

Stuff carefully into each pocket.

Secure with toothpicks if needed.


Step 5: Sear (Optional but Recommended)

Heat olive oil in an oven-safe skillet over medium-high heat.

Sear chicken:

  • 2 minutes per side

until lightly golden.


Step 6: Bake

Transfer skillet or chicken to oven.

Bake:

until:

  • cheese is melted
  • chicken is fully cooked

While chicken bakes:

Combine in a small saucepan:

  • blackberries
  • water
  • keto sweetener
  • balsamic vinegar

Simmer:

  • 5–7 minutes

Mash slightly until syrupy.

Drizzle lightly over cooked chicken.
