Air Fryer Apple Almond Custard Cake (Flourless Style) + Raspberry Sauce

Soft, creamy, and lightly sweet, this dessert blends apples, eggs, milk, and almonds into a custard-like cake that “melts in the mouth” when baked in the air fryer. It’s naturally flourless and has a gentle baked-apple flavor with a silky texture.


Ingredients

Cake

  • 3 apples (peeled, grated or finely chopped)
  • 3 eggs
  • 1 glass milk (about 200–250 ml)
  • 1 cup almond flour (this is important for structure)
  • 2–4 tbsp sugar or honey (optional, to taste)
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional but highly recommended)
  • Pinch of salt

Raspberry Sauce

  • 1 ½ cups raspberries (fresh or frozen)
  • 2 tbsp sugar or honey
  • 1 tbsp lemon juice
  • 1 tsp cornstarch + 1 tbsp water (optional for thickness)

Instructions

1. Prepare Apples

  • Peel and finely grate or chop the apples.
  • Lightly squeeze out excess juice if very watery.

2. Make the Batter

In a bowl, whisk:

  • Eggs
  • Milk
  • Sugar (or honey)
  • Vanilla
  • Cinnamon
  • Salt

Add:

  • Almond flour
  • Apples

Mix until everything is well combined. The mixture will be loose like a custard batter.


3. Prepare the Pan

  • Grease a small air fryer-safe baking dish.
  • Pour in mixture evenly.

Tap gently to remove air bubbles.


4. Air Fry

Preheat air fryer:

  • 160°C / 320°F

Cook for:

  • 25–30 minutes

It’s done when:

  • The center is set but slightly jiggly
  • Top is lightly golden
  • A toothpick comes out mostly clean

5. Raspberry Sauce

In a small pan:

  • Cook raspberries + sugar + lemon juice for 5–7 minutes.

Optional:

  • Add cornstarch slurry to thicken.
  • Mash or strain depending on texture preference.

6. Serve

  • Let cake cool for 10–15 minutes before slicing.
  • Serve warm or chilled with raspberry sauce drizzled on top.

Optional toppings:

  • Powdered sugar
  • Toasted almonds
  • Extra apple slices
