Grilled Chicken with Garlic Parmesan Cream Sauce

Chicken
- 4 boneless skinless chicken breasts (or thighs)
- About 700–800 g total
Marinade / Seasoning
- 2 tbsp olive oil or melted butter
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp Italian seasoning
- 1 tsp lemon juice (optional)
Garlic Parmesan Cream Sauce
Main Ingredients
- 2 tbsp butter
- 5–6 garlic cloves, finely minced
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 1/2 cup chicken stock
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning

- 1 tbsp cream cheese
- pinch chili flakes
- 1 tbsp parsley
- 1 tsp chicken bouillon powder
Equipment

- Heavy skillet or saucepan
- Meat thermometer (recommended)
Step 1 — Prepare the Chicken
Flatten for Even Cooking
If breasts are thick:
- slice horizontally OR
- pound lightly to even thickness
Target thickness:
- about 1.5–2 cm
This prevents dry edges and raw centers.
Step 2 — Season the Chicken
In a bowl combine:
- olive oil
- salt
- pepper
- garlic powder
- paprika
- onion powder
- Italian seasoning
- lemon juice
Rub thoroughly over chicken.
Cover and marinate:
- minimum 20 minutes
- ideal 2–4 hours in fridge
Do not marinate too long with lemon juice.
Step 3 — Preheat Grill Properly
Outdoor Grill
- Preheat to medium-high heat
- About 400–450°F / 205–230°C
Clean and oil grates lightly.
Grill Pan
Heat until very hot before adding chicken.
You want:
- sizzling immediately
- visible grill marks
Step 4 — Grill the Chicken
Place chicken on hot grill.
Cook without moving for:
- 5–6 minutes first side
Flip once.
Cook second side:
- another 5–7 minutes
Internal temperature:
- 165°F / 74°C
Do not overcook.
Step 5 — Rest the Chicken
Remove chicken and rest:
- 5–10 minutes
This keeps juices inside instead of leaking out.
Tent loosely with foil if needed.
Step 6 — Make Garlic Parmesan Cream Sauce
Melt Butter
In skillet over medium heat:
- melt 2 tbsp butter
Cook Garlic
Add minced garlic.
Cook:
- 30–60 seconds
Stir constantly.
Do NOT brown the garlic or sauce becomes bitter.
Step 7 — Add Liquids
Pour in:
- chicken stock
- heavy cream
Stir continuously.
Simmer gently:
- 3–5 minutes
Do not boil aggressively.
Step 8 — Add Cheese
Lower heat slightly.
Slowly add parmesan while whisking.
Add:
- salt
- pepper
- Italian seasoning
Optional:
- cream cheese
- bouillon powder
- chili flakes
Continue stirring until smooth.
Step 9 — Adjust Sauce Texture
Too Thick
Add:
- splash of cream
OR - chicken stock
Too Thin
Simmer longer 2–4 minutes.
Sauce should coat the back of a spoon.
Step 10 — Final Assembly
Place grilled chicken into sauce OR spoon sauce over plated chicken.
Garnish with:
- parsley
- extra parmesan

Use Fresh Parmesan
Pre-shredded cheese often contains anti-caking agents and makes sauce grainy.
Keep Heat Medium-Low
