This lighter peach coffee cake keeps the classic buttery crumb and cinnamon flavor, but trims down the fat and sugar for a more Weight Watchers–friendly version.

Ingredients

For the Cake

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ⅓ cup granulated sweetener or sugar
  • ¼ cup light brown sugar
  • 1 large egg
  • ¾ cup nonfat Greek yogurt
  • ¼ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 2 tbsp light butter, melted
  • 2 cups diced fresh peaches (about 2 medium peaches)

For the Crumb Topping

  • ¼ cup all-purpose flour
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 2 tbsp light butter, softened
  • 2 tbsp chopped pecans (optional)

Optional Glaze

  • ¼ cup powdered sugar
  • 1–2 tsp milk

Equipment

  • 8×8-inch baking pan
  • Mixing bowls
  • Whisk/spatula

Instructions

1. Prep the Oven

  • Preheat oven to 350°F (175°C).
  • Lightly coat an 8×8 pan with cooking spray.

2. Make the Crumb Topping

In a small bowl combine:

  • flour
  • brown sugar
  • cinnamon
  • butter
  • pecans

Mix with a fork until crumbly. Refrigerate while preparing batter.

3. Prepare the Batter

In a medium bowl whisk together:

  • flour
  • baking powder
  • baking soda
  • salt
  • cinnamon

In another large bowl mix:

  • egg
  • Greek yogurt
  • applesauce
  • sugars
  • vanilla
  • melted butter

Add dry ingredients into wet ingredients and stir until just combined.

Fold in peaches gently.

4. Assemble

  • Spread batter evenly into prepared pan.
  • Sprinkle crumb topping over batter.

5. Bake

Bake for 32–38 minutes until:

  • top is golden,
  • center is set,
  • toothpick comes out mostly clean.

Cool for at least 20 minutes.

6. Add Optional Glaze

Mix powdered sugar with milk and drizzle lightly over cooled cake.


Serving Suggestions

Serve warm with:

  • coffee,
  • chai,
  • or vanilla Greek yogurt.
