A traditional Greek salad (Horiatiki) is fresh, crisp, simple, and full of Mediterranean flavor. This version stays authentic while giving detailed steps and optional variations.

Ingredients (Serves 4)

Salad

  • 4 medium ripe tomatoes, cut into wedges
  • 1 cucumber, sliced into thick half-moons
  • 1 small red onion, thinly sliced
  • 1 green bell pepper, sliced into rings or strips
  • ½ cup Kalamata olives
  • 6 oz feta cheese, preferably in one block
  • 1 tsp dried oregano
  • Optional: capers

Dressing

  • ¼ cup extra virgin olive oil
  • 1½ tbsp red wine vinegar
  • 1 small garlic clove, finely grated or minced
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

1. Prepare the Vegetables

  • Wash and dry all vegetables.
  • Cut tomatoes into chunky wedges.
  • Slice cucumber thickly for a rustic texture.
  • Thinly slice onion and pepper.

2. Soften the Onion (Optional but Recommended)

Place sliced onion in cold water for 10 minutes, then drain.
This removes sharp bitterness while keeping crunch.

3. Make the Dressing

In a small bowl whisk together:

  • olive oil
  • red wine vinegar
  • garlic
  • oregano
  • salt
  • pepper
  • lemon juice if using

Taste and adjust acidity or seasoning.

4. Assemble the Salad

In a large bowl combine:

  • tomatoes
  • cucumber
  • onion
  • bell pepper
  • olives

Toss gently with most of the dressing.

5. Add the Feta

Place the feta block on top (traditional style) or crumble it over the salad.

Sprinkle:

  • oregano
  • a little black pepper
  • remaining dressing

6. Rest Briefly

Let the salad sit for 5–10 minutes before serving so flavors blend.
