Ingredients

  • 4 medium zucchini
  • 1 cup low-fat shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup marinara sauce
  • 1 teaspoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil or parsley for garnish

Instructions

1. Prep the zucchini

  • Preheat oven to 400°F (200°C).
  • Wash and dry the zucchini.
  • Slice each zucchini lengthwise into thin strips using a mandoline or sharp knife.

2. Make the hasselback effect

  • Lay 3–4 zucchini strips slightly overlapping vertically.
  • Sprinkle lightly with salt and pepper.
  • Add a small amount of mozzarella and Parmesan across the strips.
  • Carefully roll them up into tight spirals.

3. Assemble

  • Spread marinara sauce in a baking dish.
  • Place zucchini rolls seam-side down in the dish.
  • Brush lightly with olive oil.
  • Sprinkle remaining cheese, Italian seasoning, and garlic powder on top.

4. Bake

  • Bake for 20–25 minutes until zucchini is tender and cheese is bubbly and golden.
  • Optional: broil 1–2 minutes for extra browning.

5. Serve

  • Garnish with fresh basil or parsley.
  • Serve warm.
