WW Cheesy Hasselback Zucchini Rolls
A lighter, Weight Watchers–friendly zucchini dish with melted cheese, marinara, and herbs. These work as a side dish, snack, or vegetarian main.

Ingredients
- 4 medium zucchini
- 1 cup low-fat shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup marinara sauce
- 1 teaspoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt, to taste
- Black pepper, to taste
- Fresh basil or parsley for garnish
Instructions
1. Prep the zucchini
- Preheat oven to 400°F (200°C).
- Wash and dry the zucchini.
- Slice each zucchini lengthwise into thin strips using a mandoline or sharp knife.
2. Make the hasselback effect
- Lay 3–4 zucchini strips slightly overlapping vertically.
- Sprinkle lightly with salt and pepper.
- Add a small amount of mozzarella and Parmesan across the strips.
- Carefully roll them up into tight spirals.
3. Assemble
- Spread marinara sauce in a baking dish.
- Place zucchini rolls seam-side down in the dish.
- Brush lightly with olive oil.
- Sprinkle remaining cheese, Italian seasoning, and garlic powder on top.
4. Bake
- Bake for 20–25 minutes until zucchini is tender and cheese is bubbly and golden.
- Optional: broil 1–2 minutes for extra browning.
5. Serve
- Garnish with fresh basil or parsley.
- Serve warm.
