Savory Garlic Mushroom Chicken with Spinach
A creamy garlic mushroom chicken skillet packed with tender chicken, sautéed mushrooms, and fresh spinach. Great with mashed potatoes, rice, pasta, or crusty bread.
Ingredients (Serves 4)
For the chicken
- 4 boneless, skinless chicken breasts or thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp dried oregano
- 2 tbsp olive oil
- 1 tbsp butter
For the garlic mushroom spinach sauce
- 8 oz (225 g) mushrooms, sliced
- 5–6 garlic cloves, minced
- 1 small onion, finely chopped
- 2 cups fresh spinach
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 tsp Italian seasoning
- 1 tbsp flour (optional, for thicker sauce)
- 1 tbsp butter
- Salt and black pepper to taste
- Red chili flakes (optional)
- Fresh parsley for garnish
Instructions
1. Season the chicken
Pat the chicken dry with paper towels.
Mix:
- salt
- pepper
- paprika
- oregano
Rub the seasoning evenly over both sides of the chicken.
2. Sear the chicken
Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
Add chicken and cook:
- 5–7 minutes per side for breasts
- 4–5 minutes per side for thighs
Cook until golden brown and internal temperature reaches:
- 165°F / 74°C
Remove chicken and set aside.
3. Cook the mushrooms
In the same skillet, add:
- 1 tbsp butter
- mushrooms
Cook for about 6–8 minutes until browned and moisture evaporates.
Add onions and sauté 2–3 minutes.
Add garlic and cook 30 seconds until fragrant.
4. Make the creamy sauce
(Optional) Sprinkle flour over mushrooms and stir for 1 minute.
Pour in chicken broth and scrape up browned bits from the pan.
Add:
- heavy cream
- parmesan cheese
- Italian seasoning
Simmer 3–5 minutes until slightly thickened.
5. Add spinach
Stir in fresh spinach and cook until wilted, about 1–2 minutes.
Taste and adjust salt and pepper.
6. Finish the dish
Return chicken to the skillet.
Spoon sauce over the chicken and simmer 2–3 minutes so flavors combine.
Garnish with parsley and chili flakes if desired.
