Baked Chicken with Potatoes and Green Beans

A simple one-pan dinner with juicy seasoned chicken, crispy roasted potatoes, and tender green beans.

Ingredients (Serves 4–6)

Main Ingredients

  • 4 bone-in chicken thighs or drumsticks (or boneless chicken breasts)
  • 1 lb (450 g) baby potatoes, halved
  • 12 oz (340 g) fresh green beans, trimmed
  • 3 tbsp olive oil
  • 2 tbsp butter, melted

Seasoning Mix

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1/2 tsp thyme
  • 1/2 tsp chili flakes (optional)

Optional Flavor Additions

  • 4 garlic cloves, minced
  • 1 lemon, sliced
  • Fresh parsley
  • Grated parmesan cheese

Instructions

1. Preheat the oven

Preheat oven to:

  • 400°F (200°C)

Lightly grease a large baking dish or sheet pan.


2. Prepare the potatoes

In a bowl, toss potatoes with:

  • 1 tbsp olive oil
  • half of the seasoning mix

Spread potatoes on the baking tray.

Bake alone for:

  • 15 minutes

This gives them a head start so they become crispy.


3. Season the chicken

Pat chicken dry.

Rub with:

  • 1 tbsp olive oil
  • remaining seasoning mix

For extra flavor, mix melted butter with minced garlic and brush over chicken.


4. Add chicken to the tray

Remove tray from oven.

Place chicken among the potatoes.

Bake for:

  • 20 minutes

5. Prepare green beans

Toss green beans with:

  • 1 tbsp olive oil
  • pinch of salt and pepper

Optional:

  • add parmesan
  • add garlic

6. Add green beans

After chicken has baked 20 minutes:

Add green beans to the tray around the chicken and potatoes.

Top with lemon slices if using.

Bake another:

  • 15–20 minutes

Chicken is done when internal temperature reaches:

165∘F=74∘C165^\circ F = 74^\circ C

and potatoes are fork tender.


Optional Crispy Finish

Broil for:

  • 2–3 minutes

to crisp the chicken skin and potatoes.


Serving Suggestions

Serve with:

  • garlic bread
  • rice
  • side salad
  • yogurt garlic sauce

Variations

Honey Garlic Version

Add:

  • 2 tbsp honey
  • 1 tbsp soy sauce

Brush over chicken during final 10 minutes.


Italian Style

Add:

  • Italian seasoning
  • cherry tomatoes
  • parmesan cheese

Spicy Version

Increase:

  • chili flakes
  • paprika

and add hot sauce before serving.


Storage

  • Refrigerate up to 4 days
  • Reheat in oven at 350°F (175°C) for best texture
