Ingredients

Cheeseburger Filling

  • 1 lb (450 g) ground beef
  • 1 tbsp olive oil
  • 1/2 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp mustard
  • 1 tbsp sugar-free ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp paprika
  • Salt and black pepper to taste

Quesadilla Ingredients

  • 4 low-carb or keto tortillas
  • 2 cups shredded cheddar cheese
  • 4 slices cheddar or American cheese (optional for extra cheesiness)
  • 2 tbsp butter

Optional Toppings & Fillings

  • diced pickles
  • cooked bacon
  • jalapeños
  • lettuce
  • tomatoes
  • sautéed mushrooms

Burger Sauce (Optional)

Mix together:

  • 1/4 cup mayonnaise
  • 1 tbsp sugar-free ketchup
  • 1 tsp mustard
  • diced pickles
  • garlic powder
  • paprika

Instructions

1. Cook the Beef

Heat olive oil in a skillet over medium heat.

Cook onions:

  • 2–3 minutes

Add garlic and cook:

  • 30 seconds

Add ground beef and cook:

  • 6–8 minutes

until browned.

Season with:

  • mustard
  • ketchup
  • Worcestershire sauce
  • paprika
  • salt
  • pepper

Cook until most liquid evaporates.

Ground beef is commonly cooked to:

2. Assemble the Quesadillas

Lay tortillas flat.

On one half add:

  • shredded cheese
  • beef mixture
  • optional toppings
  • cheese slices if using

Fold tortillas in half.


3. Cook the Quesadillas

Heat butter in skillet over medium heat.

Cook quesadillas:

  • 2–4 minutes per side

until:

  • golden brown
  • crispy
  • cheese fully melted

Press gently with spatula while cooking.


4. Slice & Serve

Let cool:

  • 1 minute

Slice into wedges.

Serve with burger sauce or dipping sauces.


Optional Air Fryer Method

Cook at:

  • 375°F (190°C)

for:

  • 6–8 minutes

flipping halfway through.
