Ingredients
Chicken Filling
- 1 lb (450 g) ground chicken
- 1 tbsp sesame oil or olive oil
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 1 cup mushrooms, finely chopped
- 1/2 cup shredded carrots
- 1/2 cup water chestnuts, chopped (optional for crunch)
- 2 green onions, sliced
Sauce
- 1/4 cup low-sodium soy sauce or coconut aminos
- 1 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp sriracha or chili garlic sauce (optional)
- 1 tsp honey or sugar-free sweetener
- 1 tsp cornstarch mixed with 1 tbsp water (optional for thicker sauce)
For Serving
- butter lettuce, romaine, or iceberg lettuce leaves
- sesame seeds
- chopped cilantro
- lime wedges
Instructions
1. Prepare the Sauce
In a small bowl whisk together:
- soy sauce
- hoisin sauce
- rice vinegar
- sesame oil
- sriracha
- honey
Set aside.
2. Cook Aromatics
Heat sesame oil in a large skillet over medium heat.
Cook onions:
- 2–3 minutes
Add:
- garlic
- ginger
Cook:
- 30 seconds
until fragrant.
3. Cook the Chicken
Add ground chicken.
Cook:
- 6–8 minutes

4. Add Vegetables
Stir in:
- mushrooms
- carrots
- water chestnuts
Cook:
- 3–4 minutes
until vegetables soften slightly.
5. Add Sauce
Pour sauce into skillet.
Stir well to coat everything evenly.
If using cornstarch slurry, add now and simmer:
- 1–2 minutes
until sauce thickens.
Add green onions.
6. Assemble the Lettuce Wraps
Spoon chicken mixture into lettuce leaves.
Top with:
- sesame seeds
- cilantro
- extra green onions
Serve with lime wedges.
