Ingredients

Chicken Filling

  • 1 lb (450 g) ground chicken
  • 1 tbsp sesame oil or olive oil
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 1 cup mushrooms, finely chopped
  • 1/2 cup shredded carrots
  • 1/2 cup water chestnuts, chopped (optional for crunch)
  • 2 green onions, sliced

Sauce

  • 1/4 cup low-sodium soy sauce or coconut aminos
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sriracha or chili garlic sauce (optional)
  • 1 tsp honey or sugar-free sweetener
  • 1 tsp cornstarch mixed with 1 tbsp water (optional for thicker sauce)

For Serving

  • butter lettuce, romaine, or iceberg lettuce leaves
  • sesame seeds
  • chopped cilantro
  • lime wedges

Instructions

1. Prepare the Sauce

In a small bowl whisk together:

  • soy sauce
  • hoisin sauce
  • rice vinegar
  • sesame oil
  • sriracha
  • honey

Set aside.


2. Cook Aromatics

Heat sesame oil in a large skillet over medium heat.

Cook onions:

  • 2–3 minutes

Add:

  • garlic
  • ginger

Cook:

  • 30 seconds

until fragrant.


3. Cook the Chicken

Add ground chicken.

Cook:

  • 6–8 minutes

Ground chicken should reach:

4. Add Vegetables

Stir in:

  • mushrooms
  • carrots
  • water chestnuts

Cook:

  • 3–4 minutes

until vegetables soften slightly.


5. Add Sauce

Pour sauce into skillet.

Stir well to coat everything evenly.

If using cornstarch slurry, add now and simmer:

  • 1–2 minutes

until sauce thickens.

Add green onions.


6. Assemble the Lettuce Wraps

Spoon chicken mixture into lettuce leaves.

Top with:

  • sesame seeds
  • cilantro
  • extra green onions

Serve with lime wedges.
