Oatmeal Apple Pancakes Recipe

Ingredients:

  • 1 cup oatmeal (quick or rolled oats)

  • 2 apples, grated or finely chopped

  • 2 eggs

  • 150g plain yogurt (about â…” cup)

Instructions:

  1. Prepare the oats:

  2. Mix wet ingredients:
    In a large mixing bowl, whisk the eggs and plain yogurt until smooth.

  3. Add dry ingredients:
    Stir in the oat flour (or whole oats if not ground), baking powder, cinnamon, and salt.

  4. Add apples:
    Fold in the grated or finely chopped apples. Add optional raisins, nuts, or chia seeds if using.

  5. Let the batter rest:
    Allow the batter to sit for 5 minutes so the oats can absorb some moisture, thickening the mixture.

  6. Cook the pancakes:
    Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a small amount of oil.
    Pour about 2-3 tablespoons of batter per pancake onto the skillet.
    Cook for 2-3 minutes on one side until bubbles form and the edges look set, then flip and cook another 1-2 minutes until golden brown.

  7. Serve warm:
    Serve your pancakes warm with a dollop of yogurt, fresh fruit, or a drizzle of sugar-free syrup if desired.
