Oatmeal Apple Pancakes Recipe

Instructions:

Prepare the oats:
Place the oats in a blender or food processor and pulse a few times until they reach a coarse flour-like consistency (you can skip this step if you prefer a chunkier texture). -
Mix wet ingredients:
In a large mixing bowl, whisk the eggs and plain yogurt until smooth. -
Add dry ingredients:
Stir in the oat flour (or whole oats if not ground), baking powder, cinnamon, and salt. -
Add apples:
Fold in the grated or finely chopped apples. Add optional raisins, nuts, or chia seeds if using. -
Let the batter rest:
Allow the batter to sit for 5 minutes so the oats can absorb some moisture, thickening the mixture. -
Cook the pancakes:
Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a small amount of oil.
Pour about 2-3 tablespoons of batter per pancake onto the skillet.
Cook for 2-3 minutes on one side until bubbles form and the edges look set, then flip and cook another 1-2 minutes until golden brown. -
