Ingredients

Potatoes

  • 3 large russet potatoes (or 4 medium)

Seasoning

  • 2 tablespoons olive oil (or 1 tablespoon for lighter version)
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano or Italian seasoning

  • 2 tablespoons grated Parmesan
  • Pinch of chili flakes
  • Fresh parsley for garnish

Equipment

Instructions

Step 1 — Prep Potatoes

Wash potatoes well.

Cut each potato in half lengthwise, then cut each half into 3–4 wedges.

Try to keep wedges similar in size for even cooking.

Optional:
Soak wedges in cold water for 20–30 minutes for extra crispiness.

Drain and pat completely dry.


Step 2 — Season

In a large bowl combine:

  • potato wedges
  • olive oil
  • salt
  • paprika
  • garlic powder
  • onion powder
  • black pepper
  • oregano

Toss until evenly coated.


Step 3 — Preheat Air Fryer

Preheat air fryer to 380°F (193°C) for 3–5 minutes.


Step 4 — Air Fry

Place wedges in air fryer basket in a single layer.

Do not overcrowd (cook in batches if needed).

Cook at 380°F (193°C) for 15–20 minutes.

Shake basket halfway through.

Wedges are done when:

  • golden brown outside
  • tender inside
  • edges slightly crisp

Step 5 — Finish & Serve

Optional:

  • Sprinkle Parmesan while hot
