Air Fryer Zucchini Fritters
Crispy on the outside, tender inside zucchini fritters made completely vegan and cooked in the air fryer with minimal oil.

Ingredients
Main Ingredients
- 2 medium zucchinis
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 green onions, sliced
- 1/4 cup chopped parsley or dill
Dry Ingredients
- 3/4 cup chickpea flour
- 1/4 cup breadcrumbs
- 2 tbsp cornstarch
- 1 tsp baking powder
Seasonings
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp oregano
- Pinch chili flakes (optional)
Wet Ingredients
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1–3 tbsp water if needed
For Air Frying
- Oil spray or light brushing of oil
Optional Add-Ins
- Corn kernels
- Spinach
- Vegan feta
- Jalapeños
- Nutritional yeast
Equipment
- Box grater
- Mixing bowls
- Clean kitchen towel
- Air fryer
Instructions
Step 1: Grate the Zucchini
- Grate zucchini using large holes of box grater.
- Place grated zucchini in bowl.
- Sprinkle with salt.
- Let sit 10 minutes.
This helps remove excess moisture.
Step 2: Squeeze Out Moisture
- Transfer zucchini to clean towel.
- Squeeze very well until most liquid is removed.
Important for crispy fritters.
Step 3: Mix the Batter
In a large bowl combine:
- Zucchini
- Onion
- Garlic
- Green onions
- Herbs
Add:
- Chickpea flour
- Breadcrumbs
- Cornstarch
- Baking powder
- Seasonings
Mix thoroughly.
Add:
- Olive oil
- Lemon juice
If mixture feels too dry:
- Add water 1 tbsp at a time.
The mixture should hold together when pressed.
Step 4: Shape the Fritters
- Scoop about 2 tbsp mixture.
- Form into patties about:
- 1/2 inch thick
Place on plate or tray.
Step 5: Preheat Air Fryer
Preheat to:
- 375°F (190°C)
for 3–5 minutes.
Step 6: Air Fry the Fritters
- Lightly spray basket with oil.
- Arrange fritters in single layer.
- Spray tops lightly with oil.
Cook:
- 10 minutes
Flip carefully.
Cook another:
- 6–8 minutes
Until:
- Golden brown
- Crisp edges
Step 7: Serve
Serve hot with:
- Vegan yogurt sauce
- Garlic aioli
- Tahini sauce
- Sweet chili sauce
- Hot sauce
