Air Fryer Zucchini Fritters

Crispy on the outside, tender inside zucchini fritters made completely vegan and cooked in the air fryer with minimal oil.

Ingredients

Main Ingredients

  • 2 medium zucchinis
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 green onions, sliced
  • 1/4 cup chopped parsley or dill

Dry Ingredients

  • 3/4 cup chickpea flour
  • 1/4 cup breadcrumbs
  • 2 tbsp cornstarch
  • 1 tsp baking powder

Seasonings

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • Pinch chili flakes (optional)

Wet Ingredients

  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1–3 tbsp water if needed

For Air Frying

  • Oil spray or light brushing of oil

Optional Add-Ins

  • Corn kernels
  • Spinach
  • Vegan feta
  • Jalapeños
  • Nutritional yeast

Equipment

  • Box grater
  • Mixing bowls
  • Clean kitchen towel
  • Air fryer

Instructions

Step 1: Grate the Zucchini

  1. Grate zucchini using large holes of box grater.
  2. Place grated zucchini in bowl.
  3. Sprinkle with salt.
  4. Let sit 10 minutes.

This helps remove excess moisture.


Step 2: Squeeze Out Moisture

  1. Transfer zucchini to clean towel.
  2. Squeeze very well until most liquid is removed.

Important for crispy fritters.


Step 3: Mix the Batter

In a large bowl combine:

  • Zucchini
  • Onion
  • Garlic
  • Green onions
  • Herbs

Add:

  • Chickpea flour
  • Breadcrumbs
  • Cornstarch
  • Baking powder
  • Seasonings

Mix thoroughly.

Add:

  • Olive oil
  • Lemon juice

If mixture feels too dry:

  • Add water 1 tbsp at a time.

The mixture should hold together when pressed.


Step 4: Shape the Fritters

  1. Scoop about 2 tbsp mixture.
  2. Form into patties about:
    • 1/2 inch thick

Place on plate or tray.


Step 5: Preheat Air Fryer

Preheat to:

  • 375°F (190°C)

for 3–5 minutes.


Step 6: Air Fry the Fritters

  1. Lightly spray basket with oil.
  2. Arrange fritters in single layer.
  3. Spray tops lightly with oil.

Cook:

  • 10 minutes

Flip carefully.

Cook another:

  • 6–8 minutes

Until:

  • Golden brown
  • Crisp edges

Step 7: Serve

Serve hot with:

  • Vegan yogurt sauce
  • Garlic aioli
  • Tahini sauce
  • Sweet chili sauce
  • Hot sauce

Simple Garlic Yogurt Sauce

Ingredients

  • 1/2 cup unsweetened vegan yogurt
  • 1 garlic clove
  • 1 tsp lemon juice
  • Salt & pepper

Method

Mix together.
