A bariatric-friendly version of the classic New Orleans muffaletta — packed with Italian flavor, but lighter, higher in protein, and portion-conscious.

Makes

  • 4 small bariatric servings
  • Or 2 larger high-protein meals

Ingredients

Protein Layer

  • 8 oz deli turkey breast, thin sliced
  • 4 oz lean ham, thin sliced
  • 3 oz reduced-fat salami or turkey pepperoni
  • 4 oz grilled chicken breast, thin sliced (adds extra protein)

Cheese

  • 3 oz part-skim mozzarella cheese
  • 2 tbsp grated Parmesan

Bread

Choose ONE:

  • 1 small round low-carb loaf
  • 4–6 high-protein sandwich thins
  • Low-carb flatbread rounds

Olive Salad (Key Flavor)

Ingredients

  • ¼ cup chopped green olives
  • ¼ cup chopped black olives
  • 2 tbsp roasted red peppers, diced
  • 1 tbsp capers
  • 1 tbsp finely diced celery
  • 1 tbsp minced parsley
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • ½ tsp Italian seasoning
  • Black pepper to taste

Make the Olive Salad

Mix everything together in a bowl.

Let sit:

  • at least 15 minutes
  • preferably 1 hour for better flavor

Assemble the Sandwich

Step 1

Slice bread horizontally.

If using sandwich thins:

  • build individual stacked sandwiches.

Step 2

Spread olive salad evenly on both sides of bread.

Layer:

  3. Chicken
  4. Salami
  5. Mozzarella
  6. Parmesan
