Cherry Cheesecake Egg Rolls

8–10 egg rolls


Ingredients

Cheesecake Filling

  • 8 oz (225 g) cream cheese, softened (very important)

  • 1/3 cup granulated sugar

  • 1 tsp vanilla extract

  • 1/2 tsp lemon juice (optional, but brightens flavor)

  • Pinch of salt

Cherry Layer

  • 1 cup cherry pie filling (store-bought or homemade)

  • Optional: 1 tsp cornstarch (if filling is very runny)

Assembly

  • 8–10 egg roll wrappers

  • 1 egg + 1 tbsp water (egg wash)

  • Neutral oil for frying (vegetable or canola)

Optional Toppings

  • Powdered sugar

  • Chocolate drizzle

  • Whipped cream

  • Extra cherry filling


Instructions

1. Make the Cheesecake Filling

  1. In a medium bowl, beat the softened cream cheese until completely smooth.

  2. Add sugar, vanilla, lemon juice, and salt.

  3. Mix until creamy and lump-free.
    Set aside.

Tip: If there are lumps, the cream cheese was too cold. Let it sit longer or microwave for 10 seconds and re-mix.


2. Prep the Cherry Filling

  • If your cherry pie filling is very thin, stir in 1 tsp cornstarch to thicken it slightly.

  • Chill the filling for 10–15 minutes so it doesn’t leak while rolling.


3. Assemble the Egg Rolls

  1. Lay one egg roll wrapper on a clean surface in a diamond shape.

  2. Spoon 2 tablespoons cheesecake filling slightly below the center.

  3. Add 1 tablespoon cherry filling on top of the cheesecake layer.

  4. Fold the bottom corner over the filling.

  5. Fold in the left and right sides tightly.

  6. Roll upward, keeping it snug.

  7. Brush the top corner with egg wash and seal.

Repeat with remaining wrappers.

Important: Do not overfill, or they will burst while frying.


4. Fry the Egg Rolls

  1. Heat oil to 350°F (175°C) in a deep pan or pot.

  2. Fry egg rolls in batches (do not overcrowd).

  3. Cook 2–3 minutes per side until golden brown.

  4. Remove and drain on paper towels.


5. Serve

  • Dust with powdered sugar while warm.

  • Serve with whipped cream or extra cherry topping.

  • Best eaten fresh and warm.


Optional Variations

Air Fryer Method

  • Brush egg rolls lightly with oil.

  • Air fry at 375°F (190°C) for 7–9 minutes, turning halfway.

Baked Version

  • Brush with melted butter.

  • Bake at 400°F (205°C) for 12–15 minutes until golden.

Flavor Twists

  • Add cinnamon sugar to the wrapper before rolling

  • Swap cherries for blueberry, strawberry, or apple pie filling

  • Mix mini chocolate chips into the cheesecake filling
