INGREDIENTS

Corn kernels (fresh, grilled, or thawed frozen)

Butter, 3 tablespoons

Mayonnaise, 3 tablespoons

Mexican crema or sour cream, 1/2 cup

Cotija cheese, crumbled

Garlic, minced (optional)

Jalapeño, finely chopped (optional)

Lime juice, freshly squeezed

Chili powder, 1 teaspoon

Salt, to taste

Fresh cilantro, chopped

INSTRUCTIONS

  1. Step 1: Melt butter in a skillet over medium heat.
  2. Step 2: Add corn and sauté 5–7 minutes until lightly charred.
  3. Step 3: Mix mayo, crema, lime juice, garlic, jalapeño, chili powder, and salt in a bowl.
  4. Step 4: Add warm corn and toss to coat evenly.
  5. Step 5: Scoop into serving cups, top with Cotija and cilantro.
  6. Step 6: Serve warm with lime wedges.
