Crispy Garlic Mushroom Bites

Ingredients

Mushrooms

  • 400 g (14 oz) mushrooms (button, cremini, or oyster)

  • Wipe clean and cut into bite-sized pieces

    • Halve small mushrooms

    • Quarter large ones

Garlic Marinade

  • 3 tablespoons olive oil

  • 4 cloves garlic, finely minced

  • 1 teaspoon soy sauce or tamari

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika

  • ½ teaspoon dried thyme or oregano

  • Optional: ¼ teaspoon chili flakes

Crispy Coating

  • ½ cup all-purpose flour

  • ½ cup breadcrumbs or panko

  • ¼ cup cornstarch

  • ½ teaspoon paprika

  • ¼ teaspoon garlic powder

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

Frying

  • Oil for shallow frying (about ½ cup neutral oil)


Instructions

1. Prepare the Mushrooms

  1. Place mushrooms in a large bowl.

  2. Toss with olive oil, garlic, soy sauce, salt, pepper, smoked paprika, thyme, and chili flakes if using.

  3. Let marinate 10 minutes (do not exceed 15 minutes to avoid excess moisture).


2. Set Up Breading Station

  • Bowl 1: Flour

  • Bowl 2: Cornstarch mixed with 3–4 tablespoons water (thin slurry)

  • Bowl 3: Breadcrumbs mixed with paprika, garlic powder, salt, and pepper


3. Coat the Mushrooms

  1. Dredge mushrooms lightly in flour, shaking off excess.

  2. Dip into cornstarch slurry, coating fully.

  3. Roll in seasoned breadcrumbs, pressing gently to adhere.

  4. Place coated mushrooms on a tray while you finish the batch.


4. Fry Until Crispy

  1. Heat oil in a skillet to 350°F / 175°C.

  2. Fry mushrooms in batches, avoiding crowding.

  3. Cook 2–3 minutes per side until deep golden brown.

  4. Remove with a slotted spoon and drain on paper towels.


Optional Garlic Finish (Highly Recommended)

  1. Heat 1 tablespoon butter or olive oil in a small pan.

  2. Add 1–2 minced garlic cloves.

  3. Sauté 20–30 seconds until fragrant (do not brown).

  4. Toss fried mushrooms in this garlic oil and finish with a pinch of salt.


Serving Suggestions

  • Serve hot with garlic aioli, chili sauce, ranch, or yogurt dip

  • Sprinkle with fresh parsley or grated Parmesan (or vegan alternative)

  • Great as an appetizer, side, or taco filling


Baking or Air Fryer Options

Oven-Baked

  • Bake at 425°F / 220°C for 20–25 minutes, flipping halfway

  • Spray generously with oil for best crispness

Air Fryer

  • Air fry at 390°F / 200°C for 12–15 minutes, shaking halfway
