Crustless Quiche (Easy & Versatile)
Ingredients:
- 6 large eggs
- 1 cup milk (or half-and-half for richer flavor)
- 1 cup shredded cheese (cheddar, Swiss, mozzarella, or a mix)
- 1 cup fillings (see ideas below)
- ½ onion, finely chopped
- 1 tbsp oil or butter
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp dried herbs (thyme, oregano, or Italian seasoning)
Filling Ideas:
Pick a combo you like (about 1–1½ cups total):
- Spinach + feta
- Mushroom + Swiss
- Broccoli + cheddar
- Cooked bacon or ham + cheese
- Bell peppers + onions + mozzarella
Instructions:
1. Prep
Preheat oven to 180°C (350°F). Grease a pie dish or baking dish.
2. Cook fillings
Sauté onion (and any raw veggies like mushrooms or peppers) in a pan until soft.

3. Mix eggs
Whisk eggs, milk, salt, pepper, and herbs until smooth.
4. Assemble
Spread fillings evenly in the dish, sprinkle cheese on top, then pour egg mixture over everything.
5. Bake
Bake for 35–45 minutes, until the center is set and the top is lightly golden.
6. Rest & serve
Let it cool for 5–10 minutes before slicing.
