French Onion Chicken Rice Casserole

Ingredients

  • 2 cups cooked chicken (shredded or cubed)
  • 1 cup uncooked long-grain rice
  • 2 cups beef broth
  • 1 cup French onion soup (canned or homemade)
  • 1 medium onion, thinly sliced
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp thyme (optional)
  • Salt & pepper to taste
  • 1 to 1½ cups shredded mozzarella or Swiss cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Caramelize the onions
    Melt butter in a pan over medium heat. Add sliced onions and cook slowly (15–20 minutes) until golden and sweet.
  2. Preheat oven
    Set to 180°C (350°F).
  3. Mix the base
    In a large bowl, combine:
    • uncooked rice
    • beef broth
    • French onion soup
    • garlic powder, thyme, salt, pepper
  4. Assemble
    Grease a baking dish. Add rice mixture, then stir in chicken and caramelized onions.
  5. Bake (covered)
    Cover with foil and bake for 35–40 minutes, until rice is tender.
  6. Add cheese & finish
    Remove foil, sprinkle mozzarella/Swiss and Parmesan on top.
    Bake uncovered another 10–15 minutes until melted and lightly golden.

🍽️ Tips

  • For deeper flavor, use Swiss or Gruyère-style cheese (more “French onion” vibe).
  • Add mushrooms if you want an earthy twist.
  • Let it rest 5–10 minutes before serving so it sets nicely.
