🥧 Vegan Gujarati Handvo (Easy)
Ingredients
Batter

½ cup rice (or rice flour)

½ cup mixed lentils (chana dal + toor dal + moong dal)

1 cup lauki (bottle gourd), grated & squeezed

2 tbsp plain plant yogurt (or water)

1 tsp ginger-green chili paste
-
½ tsp turmeric
-
1 tsp sugar (optional)

Salt to taste
-
½ tsp fruit salt (eno) or ¼ tsp baking soda
Tempering
-
2 tbsp oil
-
1 tsp mustard seeds
-
1 tsp sesame seeds
-
Few curry leaves
-
Pinch of asafoetida (hing)
Instructions

Soak rice + lentils for 6–8 hours. Grind to a coarse batter.
(Shortcut: use rice flour + soaked lentils blend.) -
Mix batter with lauki, yogurt/water, ginger-chili paste, spices, sugar, and salt.

Just before cooking, add eno/baking soda and mix gently.

Heat oil in a pan, add tempering ingredients.

Pour batter into the pan, cover, and cook on low heat 15–20 minutes.

Flip carefully, cook another 10 minutes until golden.
(Or bake at 180°C / 350°F for 35–40 min.)
