🥧 Vegan Gujarati Handvo (Easy)

Ingredients

Batter

  • ½ cup rice (or rice flour)

  • ½ cup mixed lentils (chana dal + toor dal + moong dal)

  • 1 cup lauki (bottle gourd), grated & squeezed

  • 2 tbsp plain plant yogurt (or water)

  • 1 tsp ginger-green chili paste

  • ½ tsp turmeric

  • 1 tsp sugar (optional)

  • Salt to taste

  • ½ tsp fruit salt (eno) or ¼ tsp baking soda

Tempering

  • 2 tbsp oil

  • 1 tsp mustard seeds

  • 1 tsp sesame seeds

  • Few curry leaves

  • Pinch of asafoetida (hing)


Instructions

  1. Soak rice + lentils for 6–8 hours. Grind to a coarse batter.
    (Shortcut: use rice flour + soaked lentils blend.)

  2. Mix batter with lauki, yogurt/water, ginger-chili paste, spices, sugar, and salt.

  3. Just before cooking, add eno/baking soda and mix gently.

  4. Heat oil in a pan, add tempering ingredients.

  5. Pour batter into the pan, cover, and cook on low heat 15–20 minutes.

  6. Flip carefully, cook another 10 minutes until golden.
    (Or bake at 180°C / 350°F for 35–40 min.)
