High-Protein Berry & Pistachio Greek Yogurt Bark

Ingredients (Serves 6–8)

  • 3 cups plain Greek yogurt (preferably 2% or full-fat for creamier texture)
  • 2–3 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup mixed berries
    • strawberries (sliced)
    • blueberries
    • raspberries
  • 1/3 cup pistachios, roughly chopped
  • 2 tbsp chia seeds (optional, for extra fiber/protein)
  • 2 tbsp mini dark chocolate chips (optional)
  • Pinch of sea salt

Optional Protein Boost

Add one of these:

  • 1 scoop vanilla whey protein powder
  • 1 scoop unflavored protein powder
  • 2 tbsp powdered peanut butter

If using protein powder, add 1–3 tbsp milk to loosen the mixture if it becomes too thick.


Equipment

  • Baking tray, plate, or cutting board that fits in freezer
  • Parchment paper
  • Spatula or spoon

Step-by-Step Instructions

1. Prepare the Yogurt Base

In a large bowl combine:

  • Greek yogurt
  • honey/maple syrup
  • vanilla extract
  • optional protein powder

Mix until completely smooth.

Taste and adjust sweetness if needed.


2. Prepare the Tray

Line a tray or plate with parchment paper.

Spread the yogurt mixture into a rectangle about:

  • 1/4 to 1/2 inch thick

Thicker bark = creamier texture.


3. Add Toppings

Evenly scatter:

  • berries
  • chopped pistachios
  • chia seeds
  • chocolate chips (if using)

Lightly press toppings into the yogurt so they stick after freezing.

Finish with a tiny pinch of sea salt.


4. Freeze

Place in freezer for:

  • 3–5 hours minimum
  • overnight is best

The bark should be fully solid before breaking.


5. Break Into Pieces

Remove from freezer.

Lift parchment paper and break bark into rustic shards using:

  • hands
  • knife

Serve immediately or return pieces to freezer.


Storage

  • Store in airtight container in freezer
  • Best within 2–3 weeks

Separate layers with parchment paper to prevent sticking.
