Homemade Cool Whip Cookies (Weight Watchers Friendly)
These Cool Whip Cookies are delightfully soft and airy, with a light crunch of powdered sugar that melts on your tongue. The whipped topping gives the cookies a unique texture — almost like a cross between a brownie and a meringue — while the cake mix keeps the flavor rich without adding unnecessary fat. You can easily switch up the flavor just by using a different cake mix, from chocolate fudge to lemon or red velvet.

Perfect for a quick, low-point dessert, these cookies are also great for sharing at parties or bake sales. They look beautiful with their crinkled tops and powdered sugar coating, yet they take only a few minutes to mix and bake. Whether you’re following a Weight Watchers plan or just want a light, homemade treat, these cookies prove that indulgence can be both simple and smart.

Ingredients:

  • 1 box sugar-free cake mix (any flavor – chocolate, lemon, or strawberry work great!)

  • 1 (8 oz) container of fat-free Cool Whip

  • 1 large egg

  • ½ cup powdered sugar (for rolling)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the cake mix, Cool Whip, and egg. The dough will be sticky — that’s normal!

  3. Use a spoon or small cookie scoop to portion the dough, then roll each ball in powdered sugar until coated.

  4. Place the dough balls on the baking sheet about 2 inches apart.

  5. Bake for 10–12 minutes or until the edges are slightly golden and the tops are crackled.

  6. Let cool for a few minutes before transferring to a rack.

Yields: about 24 cookies
Estimated Points (Weight Watchers): 2–3 points per cookie (varies by ingredients and plan)
