Cheesy Mozzarella Biscuit Bombs

Golden, flaky biscuits stuffed with melty mozzarella  cheese and brushed with  garlic butter.

Ingredients

For the  Dough:

  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon salt

  • ½ cup unsalted butter, cold and cut into small cubes

  • 1 cup buttermilk (or see substitution below)

For the Filling:

  • 12 small mozzarella cheese cubes (about 1 inch each)

For the Garlic Butter Topping:

  • ¼ cup unsalted butter, melted

  • 1 teaspoon garlic powder

  • 1 tablespoon chopped fresh parsley

Step-by-Step Instructions

 Step 1: Preheat the Oven

  • Preheat your oven to 425°F (220°C).

  • Line a baking sheet with parchment paper or lightly grease it. Set aside.

Step 2: Mix the Dry Ingredients

In a large mixing bowl:

  • Add 2 cups flour

  • Add 1 tablespoon baking powder

  • Add ½ teaspoon baking soda

  • Add 1 teaspoon salt

  • Whisk together to combine and evenly distribute the leavening agents.

Step 3: Cut in the Cold Butter

  • Add the ½ cup cold butter (cubed) to the flour mixture.

  • Use a pastry cutterfork, or your fingertips to work the butter into the flour.

  • Continue until the mixture resembles coarse crumbs with pea-sized bits of butter.

Tip: Cold butter is key for flaky biscuits!

Step 4: Add Buttermilk and Form Dough

  • Pour in 1 cup buttermilk.

  • Gently stir just until the dough comes together. Do not overmix.

 Step 5: Shape the Dough

  1. Lightly flour your work surface.

  2. Turn the dough out and knead it gently 2-3 times—just enough to bring it together.

  3. Pat or roll the dough into a rectangle about ½ inch thick.

 Step 6: Fill with Cheese

  1. Cut the dough into 12 equal squares.

  2. Place 1 cube of mozzarella in the center of each square.

  3. Carefully wrap the dough around the cheese, sealing the edges completely.

  4. Shape each into a ball and place seam-side down on the prepared baking sheet.

Step 7: Prepare the Garlic Butter

In a small bowl:

  • Mix ¼ cup melted butter with 1 teaspoon garlic powder.

 Step 8: Brush and Bake

  • Brush each biscuit bomb with garlic butter.

  • Place in the preheated oven and bake for 15–18 minutes, or until:

    • Tops are golden brown

    • Cheese inside is melted and gooey

 Step 9: Finish and Garnish

  • After removing from the oven, brush again with any remaining melted garlic butter.

  • Sprinkle with chopped fresh parsley for color and flavor.

 Serving Suggestions

  • Serve warm and enjoy as-is!

  • Great side for soupschili, or salads.

  • Also perfect for appetizers or party snacks.

 Variations and Tips

  • Cheese options: Try cheddar, pepper jack, or gouda for different flavors.

  • Stuff it more: Add a bit of cooked bacon, a spoonful of pesto, or a dollop of tomato sauce for variation.

  • Add heat: Mix in crushed red pepper flakes with the garlic butter for a spicy kick.

  • Buttermilk substitute: Mix 1 tablespoon lemon juice or vinegar with 1 cup milk. Let sit for 5–10 minutes.

 Storage & Reheating

  • Store leftovers in an airtight container in the fridge for up to 3 days.

  • Reheat in the oven at 300°F (150°C) for 8–10 minutes or until warm and crisp.

 Final Tip:

For an even crispier bottom, bake them in a cast iron skillet or on a preheated baking stone!

Enjoy these irresistible, melty Mozzarella Biscuit Bombs hot out of the oven. Let me know if you want a sweet version or a gluten-free twist!
