Keto “Apple” Pie Quesadillas

A low-carb dessert that tastes like apple pie, without apples or tortillas made from flour.


Ingredients

“Apple” Filling

  • 1½ cups chayote squash, peeled, cored, and diced small
    (Best apple substitute; zucchini can be used if peeled and deseeded)

  • 2 tablespoons butter

  • 2–3 tablespoons brown monk fruit sweetener (to taste)

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ⅛ teaspoon allspice (optional)

  • 1 teaspoon lemon juice

  • ½ teaspoon vanilla extract

  • Pinch of salt

  • ¼ teaspoon xanthan gum (optional, for thickening)

Keto Tortilla Options

Cheese Tortilla

  • 1½ cups shredded mozzarella

  • 2 tablespoons cream cheese

OR

  • Store-bought keto/low-carb tortillas

Optional Add-Ins

  • 1 tablespoon chopped pecans or walnuts

  • 1 tablespoon sugar-free caramel sauce

  • Powdered monk fruit sweetener for dusting


Instructions

Step 1: Prepare the “Apple” Base

  1. Peel the chayote completely and remove the firm core.

  2. Dice into small cubes resembling apple chunks.

  3. Boil in water for 8–10 minutes until fork-tender but not mushy.

  4. Drain thoroughly and pat dry with paper towels.


Step 2: Cook the Filling

  1. Melt butter in a skillet over medium heat.

  2. Add the cooked chayote.

  3. Stir in sweetener, cinnamon, nutmeg, allspice, and salt.

  4. Cook for 8–10 minutes, allowing moisture to evaporate.

  5. Add lemon juice and vanilla.

  6. If using xanthan gum, sprinkle it in while stirring to thicken.

  7. Remove from heat and let cool slightly.


Step 3: Make Cheese Tortillas (If Using)

  1. Heat a non-stick skillet over medium-low heat.

  2. Sprinkle mozzarella into a thin 6–7 inch circle.

  3. Add small dots of cream cheese on top.

  4. Cook until melted and lightly golden.

  5. Flip carefully and cook another 30–60 seconds.

  6. Remove from skillet and allow to set briefly.


Step 4: Assemble the Quesadilla

  1. Place tortilla or cheese wrap back into the skillet on low heat.

  2. Spoon the filling onto one half.

  3. Add nuts or caramel sauce if desired.

  4. Fold over gently.

  5. Cook 1–2 minutes per side until golden and crisp.


Step 5: Serve

  • Slice into wedges

  • Dust with powdered sweetener

  • Serve with keto whipped cream or sugar-free vanilla ice cream if desired


Tips for Best Results

  • Chayote gives the most realistic apple texture.

  • Lemon juice is essential for the apple-like flavor.

  • Let the filling cool slightly before assembling to keep tortillas crisp.

  • For air fryer: 375°F for 4–5 minutes, flipping halfway.
